TASTING NOTES
The 2020 harvest in Alta Langa started on August 17th with Pinot Noir being the first grape variety to arrive in the cellar. The vineyards' different exposures and altitudes will provide a more varied harvest over time. The Chardonnay harvest was delayed as usual. Despite the early harvest, the cool summer temperatures slowed down the ripening process, ensuring that the grapes ripened evenly with a good balance between ripeness and acidity. The grapes are healthy and of good appearance. The Extra Brut Metodo Classico vintage 2020 is made from Chardonnay grapes from south-facing vineyards and PinotNoir from a vineyard at 480 metres altitude. The yields are low, and the vineyards are well-managed, producing ripe and healthy grapes. The wine is gently pressed to prevent colour transfer from the Pinot Noir skins. After fermentation in stainless steel and bottling, the wine undergoes a second fermentation and ages on the lees for 30-40 months, resulting in a yellow wine with delicate rosé reflections. The great olfactory complexity, with hints of rennet apple and jasmine, honey and bread crust are well balanced by a fresh and savoury mouthfeel and an important structure with good persistence. Perfect with risottos, white meats, mushrooms and light sauces.
