TASTING NOTES
The 2020 harvest began on 17 August in Alta Langa, with the first bunches of Pinot Noir entering the cellar. The different exposures and altitudes of the vineyards allow for a harvest that extends into the month. Although the flowering was early, some two weeks earlier than usual, the harvest was almost in line with the average of other vintages. The cool summer allowed the grapes to ripen slowly and evenly, resulting in a healthy and beautiful harvest, balanced between ripeness and acidity. The grapes for this sparkling wine were grown at an altitude of 480 metres above sea level, right in front of Roberto Garbarino's winery, on a marly limestone soil with a high percentage of sand. This Blanc de Noir 2020 comes entirely from a selection of Pinot Noir grapes, produced according to the classic method. The hand-picked bunches are gently pressed to avoid the transfer of colour from the Pinot Noir skins to the must. The base wine is fermented in steel vats at 14°C, followed by bottling and stacking to facilitate the second fermentation, also known as prise de mousse. After a month of re-fermentation at a very low controlled temperature, the wine is aged on the lees for 30-40 months and undergoes remuage before disgorging; what is obtained is a pale golden yellow wine with a fine and persistent perlage. The nose is complex, with notes of rennet apple, dog rose, honey and bread crust. On the palate it is well balanced, fresh and savoury, with a solid structure and good persistence.
