TASTING NOTES
This 2019 vintage Extra Brut Metodo Classico bubbly is made from Chardonnay grapes from south-facing vineyards and from Pinot Noir growing in the small east-facing vineyard next to the winery at an altitude of 480 m above sea level. The yields are very low, the vines are about 15 years old and thanks to the altitude and the scrupulous and careful management of the countryside, they produce healthy and perfectly ripe grapes. The manually harvested and selected bunches are gently pressed so as not to transfer the colour into the must from the Pinot Noir skins. The base wine is fermented in steel tanks at 14°C and then bottled and stacked for the second fermentation. One month of re-fermentation at a very low controlled temperature, 30 to 40 months of ageing on the lees and about 1 year of remuage give a yellow wine with delicate rosé reflections with a fine and persistent perlage. The great olfactory complexity, with hints of rennet apple and jasmine, honey and bread crust are well balanced by a fresh and savoury mouthfeel and an important structure with good persistence. Perfect with risottos, white meats, mushrooms and light sauces.
