The Cabochon Stellato 2012 is a true gem from the Monte Rossa winery, located in the heart of the Franciacorta DOCG, specifically in the morainic hills of the municipalities of Bornato and Brescia. This area is particularly captivating as it lies south of Lake Iseo, where the hills create a unique microclimate. Here, the cool air flowing between the Po Valley and the lake contributes to ideal conditions for viticulture, making Monte Rossa's vineyards a privileged location for producing high-quality sparkling wines. The Cabochon Stellato is the result of meticulous work in the vineyards, which are situated in distinct crus such as Pratone, Barek, Brolo, Palo, and Nespoli. These lands, of glacial morainic origin, provide a structure that favors the development of vines and grapes. The plants are trained using the Cordone Speronato method, maintaining a density of 5,000 plants per hectare with a planting distance of 2 x 1 m. The vines have an average age of 16 years, allowing them to express their full potential. The cuvée of Cabochon Stellato consists of an elegant blend of 70% Chardonnay and 30% Pinot Noir, all sourced from selected crus. The maximum yield of grapes is limited to 85 quintals per hectare, enabling a rigorous selection of the best grapes. Harvesting is done manually in crates, ensuring that only the finest bunches are used for vinification. The vinification process is meticulous: the grapes are gently pressed, and only the best part is selected for fermentation. Each cru is vinified separately, fermenting in 250-liter oak barrels from September to February. After this phase, the wine ages in the bottle for an impressive 9 years, a period that allows the Cabochon Stellato to develop extraordinary aromatic complexity. When pouring a glass of Cabochon Stellato 2012, one is greeted by a yellow color with green reflections and a fine, persistent perlage. On the nose, the wine offers elegant aromas ranging from honey to linden flowers, with notes of bergamot and spices such as cinnamon.
