The Cabochon Doppio Zero Millesimato 2018 by Monte Rossa is a prestigious sparkling wine that represents the excellence of Franciacorta. This Brut Nature, without any added sugar dosage, is made from the grapes of the finest crus in the region and is distinguished by its bold and vibrant character, which gives it remarkable intensity and depth. The wine comes from the moraine hills of Bornato, Brescia. This area is characterized by a unique microclimate, located south of Lake Iseo, where air currents create favorable thermal exchanges between the plain and the lake. The grapes are manually selected in the vineyard and harvested in crates. The pressing is done gently, with a selection of the best part of the grapes not exceeding 48% of the yield. Each cru is vinified separately in 250-liter oak barrels from September to February. After vinification, the wine ages in the bottle for over 48 months on the lees, a period that helps develop aromatic complexity and a refined structure. The Cabochon Doppio Zero Millesimato 2018 presents a slightly golden yellow color with a fine and persistent perlage. On the nose, it reveals notes of bergamot, peach, chamomile, and jasmine. On the palate, it is tense and crisp, with great persistence, balanced by a floral and citrusy finish. This sparkling wine is perfect for immediate enjoyment or after a period of bottle aging, making it ideal for special occasions or as an exclusive gift. The wine produced has always enjoyed a good reputation and the first written testimony dates back to 1570 describing wine with "bubbles" , a product defined by the ancients as lively and bubbly.
