Cabochon is the most prestigious Franciacorta of Monte Rossa. It was born from the research, begun in 1985, of an even more careful selection of the cru of the Monte Rossa hill and of a new vinification system that introduced the barriques for the first fermentation of the must. The results have been such good that the wine obtained its own label. The Monte Rossa hill is part of that crown of hills that closes Lake Iseo to the south with the beginning of the subalpine area and separates it from the Po valley area. The vineyards are located where the air currents are increased due to the thermal exchanges between the Po Valley and Lake Iseo. The Crus that make up this Franciacorta are: Pratone, Barek, Brolo, Palo, Nespoli. The grapes are rigorously harvested by hand in boxes. After a careful selection, always manual, the grapes are transferred to the press. Soft pressing has a yield of no more than 48%. Each Cru is vinified by itself, in 250 liter oak barrels between September and February. The refinement in the bottle lasts over 42 months. The Cuvèe is made up of 80% wines from historical crus and 20% reserve wines. Franciacorta Cabochon Fuoriserie N°022 Gift Box on the nose is compact and dense with hints of kiwi and exotic fruits, floral (mimosa and broom) and ginger. In the mouth emerge complex flavors such as on the nose. Ample, creamy, deep wine with return of limes and capers.
