TASTING NOTES
After a few days' rest to allow the pomace to mature further, distillation takes place in discontinuous stills, in copper bain-marie cauldrons, to extract all the light, delicate aromas and aromatic complexity with which Sangiovese is generous. Over two years in steel tanks to allow all the delicate components of this Grappa to come into balance. The product is clear to the eye, light and delicate but complex and slightly fruity on the nose. It is difficult to trace it back to a single small fruit, but rather to a bouquet of very ripe blackberries and blueberries. On the palate, the taste is typical of a powerful, pleasant and almost soft Grappa, with a remarkable persistence.

The historic Cafaggio Estate, located in Panzano within the renowned Conca d'Oro area of Chianti, comprises 60 hectares of land. With a long history dating back to 1408, the estate has changed hands over the centuries.
