TASTING NOTES
The 2020 vintage in Chianti Classico faced variable weather conditions, resulting in fluctuations in wine production volumes. Initially, the spring season was characterised by cold and rainy conditions, which caused some concern among vine growers. However, the summer brought higher temperatures and sunshine, which aided grape ripening, while occasional beneficial rainfall also helped maintain a balanced growing season. Despite these challenges, the overall outcome of the vintage was positive, with wines exhibiting concentrated fruit, freshness, and lively acidity. The 2020 vintage of Chianti Classico wines demonstrates balance, harmony, and the potential for ageing. The Sangiovese grapes used by Cafaggio for this Chianti Classico 2020 are grown in the Conca d'Oro area, in Panzano in Chianti. The vineyards are exposed to the south, south-east, and south-west, with an average elevation of 320 metres above sea level. The soil is loamy clayey, medium deep, pebbly, well drained, and originates from calcareous sandstone. Manual harvesting takes place in the last ten days of September and first ten days of October. The wine is then temperature-controlled alcoholic fermented, the pomace cap is broken up and wetted by pumping over in the air, and malolactic fermentation occurs spontaneously. The wine matures for 12 months in 65 hl Slavonian oak casks. Further ageing in cement vats for 12 months and 3 months in bottles before release. The wine has a rich garnet colour with ruby red hues. The nose presents delicate spices, ripe plums, blackberries, leather and a touch of vanilla. The palate is direct, with a firm grip, accompanied by surprising acidity leading to a long finish.
