TASTING NOTES
After a few days' rest to allow the pomace to mature further, distillation takes place in discontinuous stills, in copper bain-marie cauldrons, to extract all the light, delicate aromas and aromatic complexity with which Sangiovese is generous. This is a truly magnificent process! One year in steel tanks and over five years in French oak barrels previously used to mature the white wine. To the eye, a beautiful luminous amber colour. On the nose, its bouquet is particularly complex, blending the initial fruitiness with the scent of vanilla and light cocoa typical of French oak. On the palate, the taste is very complex and particularly rich, but also very delicate. Its beautifully persistent aftertaste leaves a pleasant taste rich in further nuances.

Cafaggio Discover Cafaggio in Tuscany and its fine wines in our online store The historic Cafaggio Estate, located in Panzano within the renowned Conca d'Oro area of Chianti, comprises 60 hectares of land. With a long history dating back to 1408, the estate has changed hands over the centuries. Currently owned by ISA S.p.A, a financial company based in Trento since 2016, Cafaggio is dedicated to being a distinguished producer of Chianti Classico wines. The estate comprises 30 hectares of vineyards, 3 hectares of olive groves, and the remaining land is covered with woodland. Previously belonging to various entities, including the Benedictine monks of Siena, the Niccolini family of Florence, and the Florentine Hospital of Santa Maria Nuova, the estate was later renovated and revitalised by the Boddi family in the 19th century and the Farkas family in the 1960s. During the Farkas family's tenure, the cellars were restored and the vineyards and olive groves were given meticulous attention. Cafaggio is committed to continuous improvement and the careful management of the entire production process.
