TASTING NOTES
The clay-limestone soil on which the Pinot Noir vines grow, at least 35 years old, is well exposed to the south ensuring full ripeness of the grapes. Manual harvesting, the use of only the flower must, fermentation at a very low temperature, bâtonnage, aging in medium toasted oak barrels and the absence of blending are all factors that contribute to the creation of a champagne with a golden color and fine, persistent perlage. On the nose we find a distinct ripe yellow apple, notes of pastry and almonds. In the mouth it is juicy, fresh and slightly savory. For those who like fresh champagnes we recommend drinking it within the first 2 years after disgorgement. A storage period of 5 to 15 years will also guarantee you great tasting experiences. CRUCIFIX PÈRE & FILS cultivates its vineyards with the utmost respect for its terroir. Durable Viticulture (V.D.C.) and High Environmental Value (H.E.V.) are a continuation of their commitment and family values passed down for five generations.

It stretches between the cities of Reims and Epernay and lies between the Marne and Vesle rivers.
