Agronomic practices respecting the environment and fauna, but above all the farming tradition, are the starting point for all Sébastien Crucifix champagnes. Indeed, for the past 10 years, in his vineyards, all Premier Cru, neither herbicides nor insecticides are used, and the harvest is strictly carried out by hand, with sorting directly in the field. The Chardonnay harvested is therefore healthy and perfectly ripe. The grapes are pressed and the must obtained is fermented in temperature-controlled steel tanks. The resulting base wine is then bottled to begin the long and delicate process of frothing, where it will age for at least 4 years before disgorging. In the glass, this Blanc de Blancs is pale gold in colour with a fine, persistent perlage. The nose is immediately striking with pink grapefruit followed by sweet notes of hawthorn and acacia flowers. In the mouth, bread and pastry notes are dominant with a finish of acacia honey that balances the marked freshness revealing a long and generous sip. CRUCIFIX PÈRE & FILS cultivates its vines with the utmost respect for its terroir. Durable Viticulture (V.D.C.) and High Environmental Value (H.E.V.) are the continuation of their commitment and family values handed down over five generations. The Magnum bottle is ideal for enjoying among friends and has a more interesting evolution than the standard bottle.
