The latest addition to the Coteaux Champenois range, Version Rouge is the result of the encounter between Champagne Devaux and Michel Chapoutier. Let's start by saying that the 2018 vintage was a great harvest with very healthy grapes and an exceptional maturation that produced juicy, full and structured wines. Maceration and alcoholic fermentation are carried out in thermo-regulated oak barrels, after which the wine is moved into barriques for the malolactic fermentation. A further aging in cask for 18 months before bottling gives this Coteaux Champenoise great softness. In the glass its color is ruby red with a fascinating depth. The nose is very delicate and characterized by ripe fruity notes of black cherry and black currant. Then there are toasted notes of vanilla and light tobacco. In the mouth it is soft with elegant and velvety tannins. The juicy fruit is flanked by fresh notes. The result is a balanced finish between softness, freshness and silkiness. This wine is tasty, intense and very pleasant, perfect for savory meats such as lamb with chanterelles or a boeuf bourguignon.
