TASTING NOTES
This Mersault is made from 100% Chardonnay grapes from the vineyard of the same name located to the north-east of the village of Maursault. In this area, the vines grow on a moderate slope, on shallow stony soils with a north-eastern exposure, and give rise to outstanding white wines with a great predisposition to ageing. Alcoholic fermentation in barriques for 2 months. Stirring of the lees according to wine tasting and observation. Ageing: 14 months of which 12 months on the lees without racking and then 2 months in vats. 100% in oak casks with 25% new oak casks. The Chardonnay draws all the freshness of the terroir and the result is a very lively wine from the very first taste; fullness and body emerge later. The finish is rich and opulent with fruity hints, enveloping notes of honey and hints of roasting. Pairings: Trout in an almond crust or with Bresse chicken with truffle.
