TASTING NOTES
Alcoholic fermentation in barrique for 2 months. Mixing of the lees according to the tasting and observation of the wine. Aging: 14 months of which 12 months on the lees without racking and then 2 months in the tank. 100% in oak barrels with 25% in new oak barrels. Chardonnay draws all the freshness of the terroir and thus a very lively wine is obtained from the first taste; in a second moment the fullness and the body emerge. Rich finish, of great opulence with fruity hints, enveloping notes of honey and hints of toasting. Pairings: Trout in almond crust or with Bresse chicken with truffle.
