Puligny-Montrachet is a wine known for its concentration and excellent style. It offers a captivating combination of white flowers, mint, and pear aromas. This well-balanced wine showcases great complexity and elegance. It is sophisticated, refined, and vibrant, with a persistent finish that demonstrates the mineral intensity of the terroir. The vineyard's south-eastern exposure contributes to the wine's exceptional qualities. The vineyard, planted in 1965, has clayey and calcareous soil, and the vines are trained using the Guyot method, resulting in a low yield of 45 hectolitres per hectare. Alcoholic fermentation takes place in barriques for two months, followed by 14 months of maturation on the lees without racking and an additional two months in tanks. French oak barrels, 25% of which are new, are used in the process. Pairing this wine with a scallop carpaccio with a yuzu lemon marinade is an ideal choice.
