Domaine Michaut Frères' Chablis 2023 is a white wine that represents an excellence of the Chablis wine region in Burgundy. This vintage stands out for its vibrant freshness and mineral typicity, reflecting the unique characteristics of the local terroir. Chablis is known for its Kimmeridgian clay soils, which impart a distinctive minerality to the wines. The Domaine Michaut Frères winery is located in Béine, near Chablis, and spans 60 hectares of vineyards. In recent years, the region has faced challenges such as reduced harvests, yet the quality of the wines remains high. The Chablis 2023 is produced exclusively from Chardonnay grapes, which thrive in the cool climate and mineral-rich soils of the region. This grape variety is renowned for its ability to express the terroir, making each bottle unique. Visually, the wine presents a bright straw-yellow colour. On the nose, it reveals mineral notes accompanied by delicate floral and fruity nuances, with a hint of citrus. On the palate, Chablis 2023 offers a crisp acidity and freshness that invites further drinking. The finish is long and clean, characterised by persistent minerality. This wine pairs perfectly with seafood dishes such as oysters and mussels, as well as with raw seafood platters and light risottos. It is also ideal with fresh cheeses or vegetarian dishes. The winemaking process occurs in stainless steel, with alcoholic fermentation lasting 15 days at 21ºC, followed by malolactic fermentation for 5 weeks at 20ºC. No oak ageing is used, allowing the fresh and fruity character of the wine to emerge. Chablis 2023 has received positive reviews for its freshness and balance.
