TASTING NOTES
Bolgheri Bianco 2021 is made from grapes cultivated in the vineyards of Donna Olimpia 1898 in Bolgheri (LI), located on the coastal strip of the Tyrrhenian Sea, lying on sandy-loam soil formed in a continental, aeolian and colluvial alluvial environment. The 2021 grape harvest was characterised by a mild and very wet winter, with temperatures that only rarely touched 0°C. The frost at the beginning of April ruined the first buds, but the vines reacted well and, thanks to the correct interventions in the countryside and the stable and warm spring, recovered quickly. The summer was dry and well ventilated, but with temperatures that were not excessive, except for a few brief periods. The drought lasted almost continuously from mid-May until the harvest in September, as is increasingly the case on this coast. The grapes, selected in the vineyard, were taken to the cellar to be vinified immediately. After crushing and decanting, alcoholic fermentation takes place in temperature-controlled stainless steel tanks. Once finished, a first racking is carried out, after which the wine remains on its fine lees (yeasts) for 14 months, undergoing repeated stirring (battonages) to suspend the yeasts deposited on the bottom. At the end of this long ageing period, the wine is cold stabilised and bottled. This technique makes the product more pleasant to the taste and very long-lived. Bright and lively straw yellow colour of medium intensity. Aromas of ground ginger, fresh fruit and flowers. Medium-bodied, with wet stone character. Crushed garden herbs. Green apple. Bright and with a refreshing finish..
ORIGIN OF THE NAME
The name of Donna Olimpia 1898 is in honor of Olimpia Alliata Signora di Biserno and wife of Gherardo della Gherardesca, who baptized the estate in 1898 on the occasion of the 25th anniversary of their wedding.
