TASTING NOTES
On visual inspection, it has a beautiful, intense mahogany colour. The nose reveals aromas of apricot, cinnamon and brioche. In the mouth, it is round and persistent. In this cognac, whose name derives from the portion that evaporates from the barrels each year, there is a perfect balance between toasted notes and the hints of "rancio" typical of the old Cognacs of Grande Champagne. Worthy of note are the intense aromas of fig, apricot, jasmine, walnut and quince. In the finish, there is a toasty note of bread and chocolate. A well-balanced Cognac of great elegance, perfect to accompany tasty dishes such as salmon in Teriyaki sauce or Foie gras with a chutney. A more classic pairing instead with Chelsea Bun or Tart tatin and coffee. Pablo Ferrand, for the Cognac Marquis de Gensac, follows the grapes directly to the vineyard. 8 hectares are cultivated sustainably with sheep weeding in winter and mechanical weeding in summer to prevent the grapes from being eaten. Two discontinuous copper stills of 18 and 25 hectolitres are used, the ideal size to obtain the finest brandy. The heating process is called 'soft' with distillation on the fine lees. To obtain a unique taste after distillation, cuts are made manually by the nose. The ageing of this Cognac VS takes place in Limousin oak barrels of 400 to 500 l.
