TASTING NOTES
Cognac VS has a warm amber colour. The nose is characterised by fresh tangerine and vanilla. On the palate this Cognac is powerful, with complex citrus aromas combined with subtle floral and warm notes with nuances of almond and oak. The finish is long, soft and pleasant, where we find aromas of dried fruit. A seductive ingredient for cocktails or long drinks, to preserve the taste of cognac without overpowering the other ingredients. Enjoyed straight or as a long drink with tonic or ginger ale, it becomes a surprisingly refreshing aperitif. It goes very well with blood orange, pineapple or cucumber, while surprising with black caviar and prawns as an aperitif. Interesting as an after-dinner drink with Roquefort or milk chocolate. Pablo Ferrand, for the Cognac Marquis de Gensac, follows the grapes directly into the vineyard. 8 hectares are cultivated sustainably with sheep weeding in winter and mechanical weeding in summer to prevent the grapes from being eaten. Two discontinuous copper stills of 18 and 25 hectolitres are used, the ideal size to obtain the finest brandy. The heating procedure is called 'soft' with distillation on the fine lees. To obtain a unique taste after distillation, the cuts are made manually by the nose. The ageing of this Cognac VS is in Limousin oak barrels of 400 to 500 l.

These Cognacs are prized for their quality and are the pride of Pablo Ferrand and his family. They are characterised by their marked smoothness, velvety texture and vivid fruity notes.
