TASTING NOTES
The 2020 harvest for this Chardonnay began in early September at Roberto Garbarino's winery, with the first bunches entering the cellar. Although the flowering was early, brought forward by about two weeks, the harvest was in line with the average of previous vintages. The cool summer allowed the grapes to ripen slowly and evenly, resulting in a healthy and beautiful harvest, balanced between ripeness and acidity. This bubbly Blanc de Blanc Metodo Classico vintage 2020 is produced entirely from a selection of Chardonnay grapes growing at an altitude of 500 m above sea level on a marly limestone soil with a percentage of sand. The production of these 15-year-old vines is approximately 50 hectolitres per hectare. The manually harvested and selected bunches are gently pressed. The base wine is fermented in steel tanks at 14°C and then bottled and stacked for the second fermentation. A month of re-fermentation at a very low controlled temperature, 30 to 40 months of ageing on the lees and about 1 year of remuage give a straw-yellow wine with a fine and persistent perlage. The great olfactory complexity, with hints of rennet apple and jasmine, lemon blossom with a crusty bread finish are well balanced by an important structure on the palate with remarkable persistence.
