The 2020 harvest began on 17 August, with Pinot Noir leading the way into the winery. Thanks to the variety of vineyard exposures and altitudes, the harvest was less concentrated over time, allowing for an even ripening of the grapes. Despite the early harvest, the cool summer temperatures favoured a perfect balance between ripeness and acidity. The grapes were healthy and of exceptional quality. This sparkling wine is crafted from a skilful blend of Chardonnay and Pinot Noir. The Chardonnay grapes come from south-facing vineyards, while the Pinot Noir is cultivated at an altitude of 480 metres. Low yields and meticulous vineyard management ensure that the grapes are ripe and healthy, ready to create a wine of great character. The production of Extra Brut Le Rapide is an artisanal process that deserves attention. After a gentle pressing to preserve the colour of the Pinot Noir, the grapes are fermented in stainless steel. This is followed by bottling and a second fermentation in the bottle, with aging on the lees lasting between 30 and 40 months.
