TASTING NOTES
This Extra Brut Classic Method sparkling wine vintage 2018 is produced with Chardonnay grapes from vineyards facing south and from Pinot Noir grapes that grows in the small vineyard adjacent to the winery facing east. The yields are very low, the vines are about 20 years old and thanks to the altitude and the scrupulous and careful management of the countryside, they produce healthy and perfectly ripe grapes. The hand-picked and selected bunches are gently pressed in order not to transfer the color to the must from the Pinot Noir skins. The base wine is fermented in steel tanks at 14°C and subsequently bottled and stacked for the second fermentation. One month of second fermentation at a controlled temperature, between 30 and 40 months of aging on the lees and about 1 year of remuage gives us a bright yellow wine with very delicate rosé reflections with a fine and persistent perlage. The great olfactory complexity, with hints of rennet apple and jasmine, honey and bread crust is well balanced by a fresh and savory mouth and an important structure with a good persistence. Perfect with risotto, white meats, mushrooms and light sauces. The Magnum bottle is perfect together with some few friends

Roberto Garbarino is a young winemaker graduated at the Turin Univerisy in Agricultural Sciences. After ten years of experience in various wineries in Piemonte region, and expecially in the beautiful Langa, meanwhile he was looking for a house, he found a 19th century farmhouse with 6.5 hectars of vineyard facing south in Neviglie. Since 2013, when the construction of the cellar was completed, he began to produce Metodo Classico Alta Langa DOCG, Extra Brut and Rosé, and Moscato d'Asti Docg.Together with Beatrice, Roberto was able to improve further and in 2022 they purchased another 4 hectares of Alta Langa, increasing the planted area with vines up to nearly 11 hectares. In the management of the vineyards neither herbicides nor chemical fertilizers are used, moreover the use of pesticides is reduced to the strictly necessary, therefore only in case of unfavorable climatic conditions, making sure that environmental sustainability is at the first place among the company priorities.
