TASTING NOTES
Salice Salentino is one of the most representative denominations of origin of Salento. The grapes used are always Nergramaro, a vine as ancient as it is typical of Puglia together with a small percentage of native vines, in this case the Malvasia Nera, which is experiencing a great rediscovery in recent years from beeing a minor vine . The dark and sugary grapes are harvested in September, and after fermentation at a controlled temperature, the wine obtained is aged 12 months in barriques and at least 6 months in the bottle. In the glass we will find an intense ruby red wine with ample and persistent aromas of ripe red fruits, pulpy, persistent and velvety in the mouth. Perfect to accompany game dishes and aged cheeses, it gives its best if uncorked an hour before being served. The label as well as the name of this wine are a tribute to the Basilica of Santa Croce in Lecce, the masterpiece and reference point of the Salento baroque.
