TASTING NOTES
Cabochon is the most prestigious Franciacorta of Monte Rossa. It was born from the research, begun in 1985, of an even more careful selection of the cru of the Monte Rossa hill and of a new vinification system that introduced the barriques for the first fermentation of the must. The results have been such good that the wine obtained its own label. The Monte Rossa hill is part of that crown of hills that closes Lake Iseo to the south with the beginning of the subalpine area and separates it from the Po valley area. The vineyards are located where the air currents are increased due to the thermal exchanges between the Po Valley and Lake Iseo. The Crus that make up this Franciacorta are: Pratone, Barek, Brolo, Palo, Nespoli. The grapes are rigorously harvested by hand in boxes. After a careful selection, always manual, the grapes are transferred to the press. Soft pressing has a yield of no more than 48%. Each Cru is vinified by itself, in 250 liter oak barrels between September and February. The refinement in the bottle lasts over 36 months. This Cuvèe is made up of 80% of wines from historical crus and 20% of reserve wines. Franciacorta Cabochon Fuoriserie N°024 is characterized by a very fine perlage and a bright straw yellow color. On the nose we find notes of sugared almonds, passion fruit and hints of wild mint. In the mouth it is crunchy and persistent with a officinal return,  a lot of almond and a fruity finish.

Cabochon

Cabochon Discover Cabochon in Franciacorta and its fine wines in our online store The name Franciacorta identifies, since 1200, a small region near the Lake Iseo , in the province of Brescia. The wine produced has always enjoyed a good reputation and the first written testimony dates back to 1570 describing wine with "bubbles" , a product defined by the ancients as lively and bubbly. Today, the word Franciacorta no longer identifies only the territory but also the wine ( the noble Italian DOCG «bollicine» ) and the Metodo Classico (refermentation in the bottle with minimum aging of 25 months after the harvest). Born in 1987 from an intuition of Emanuele Rabotti , Cabochon soon became one of the most important symbols of the company. Refinement, intensity, elegance and an endless perlage: this is Cabochon, the most prestigious Franciacorta of Monte Rossa. Cabochon, so structured, rich and intense, is one of the spearheads in the prized territory of Franciacorta.
