TASTING NOTES
The 2021 vintage in Chianti Classico was affected by variable weather conditions that influenced grape production. The winter was notably cold and rainy, followed by a spring season with some climatic instability, characterised by alternating rain and cool temperatures. These conditions led to a later flowering than in previous years and lower grape production. Temperatures stabilised during the summer, and the weather was warmer and drier, which was favourable for good grape ripening. However, some areas experienced heat waves and drought, which resulted in a decrease in yield per hectare in certain vineyards. The Sangiovese grapes used by Cafaggio for this Chianti Classico 2021 are grown in the Conca d'Oro area, in Panzano in Chianti. The vineyards are exposed to the south, south-east, and south-west, with an average elevation of 320 metres above sea level. The soil is loamy clayey, medium deep, pebbly, well drained, and originates from calcareous sandstone. Manual harvesting takes place in the last ten days of September and first ten days of October. The wine is then temperature-controlled alcoholic fermented, the pomace cap is broken up and wetted by pumping over in the air, and malolactic fermentation occurs spontaneously. The wine matures for 12 months in 65 hl Slavonian oak casks. Further ageing in cement vats for 12 months and 3 months in bottles before release. The wine has a rich garnet colour with ruby red hues. The nose presents delicate spices, ripe plums, blackberries, leather and a touch of vanilla. The palate is direct, with a firm grip, accompanied by surprising acidity leading to a long finish.
