Cimarelli Fra' Moriale Verdicchio dei Castelli di Jesi Classico Superiore DOC 2023 is a dry and refined white wine, made from Verdicchio grapes sourced from the Coste cru in the Staffolo area. The vineyards are south-west facing and trained with the double Guyot system at an altitude of around 380-400 metres above sea level. The loose clay-limestone soil imparts the typical complexity and freshness of the Marche region. The grapes are hand-harvested in the first half of September, with careful selection of the ripest bunches to ensure concentration and quality. Vinification takes place entirely in stainless steel, with gentle pressing of whole bunches and controlled temperature fermentation. The wine matures "sur lies" (on the lees) for about nine months in steel and cement tanks, providing structure and depth without losing varietal clarity. This is followed by one year of bottle ageing that completes the wine’s balance. In the glass, it displays a bright and clear straw-yellow colour. The nose reveals a delicate and refined bouquet opening with aromas of white flowers, green apple, fresh citrus, and subtle mineral notes. There are also pleasant hints of bitter almond, anise, and mint. On the palate, it is dry, balanced, with vibrant acidity and pleasant sapidity, making it harmonious and enveloping, with a long and enjoyable finish. Fra' Moriale 2023 is ideal paired with light appetizers, fish and shellfish dishes, white meats, and fresh cheeses, fully expressing the authentic and territorial identity of the Marche region.
