TASTING NOTES
The 2021 harvest began with a mild winter, albeit rich in precipitation, including snow, which ensured an excellent water supply to the soil, essential for the summer which, on the other hand, was the least rainy in recent years. The Dolcetto harvest began in mid-September. Dolcetto is one of the vines that had the best results in relation to the vintage: the late budding, typical of the vine, averted the problems associated with the freezing cold of late spring, and the summer nights spent without significant temperature changes protected the drop of the fruit, arriving at the harvest time perfectly healthy and with the characteristic values of optimal ripeness. Savincato 2021 has an intense ruby red color with evident violet reflections. The nose is intense and fruity and notes of small fruits such as cherry, blueberry and blackberry are noted. In the mouth it is full, harmonious and persistent.
ORIGIN OF THE NAME
The name originates from the Savincati, a Celtic population present in Piedmont around the 1st century b.C.
