TASTING NOTES
Sauvignon Blanc is a semi-aromatic grape, characterized by fruity aromas, vegetal and spicy scents and a decisive freshness. The grapes grow on the warm and sandy soils of the Oltradige and were harvested at mid-September 2022. The soft pressing of the hand-selected grapes was followed by fermentation at a controlled temperature. The refinement of the wine is carried out in steel tanks to keep the freshness of the product intact. The color is straw yellow with greenish reflections. The nose has vegetal notes of tomato leaves, nettle and sage, floral notes of acacia and elderberry flowers, fruity notes of yellow peach and lime, slightly spicy and savory. The taste is fruity with a delicate acidity, good structure and long aftertaste. A perfect wine as an aperitif, accompanied by dishes based on asparagus, fish dishes, light or vegetarian dishes. Ideal for cooking with aromatic herbs. The 2022 harvest in South Tyrol, as throughout Italy, will be remembered as one of the hottest and driest. Second in temperature only to that of 2015, it began, at least in this area, almost three weeks earlier. The grapes brought to the cellar are slightly smaller than in previous years, with a higher sugar content and decidedly warmer aromas. It can certainly be interesting to compare the same wine with the previous vintage, 2021, which in contrast had been cool and had led to a slightly delayed harvest.
