TASTING NOTES
The history of this sweet and fascinating dessert wine goes back centuries. The grapes are dried for longer than those used to make Amarone, resulting in a high concentration of sugar in the fruit. However, not all of the initial sugar content is converted into alcohol. The result is a rare wine in which the alcohol and sugar blend nicely, forming a smooth, sweet texture. It has a wide range of aromas reminiscent of dried rose, wild blueberry and black cherry. It is the supreme wine for meditation. It elevates the taste of dry and sweet desserts, creams, high-fat fresh cheeses, honey and jams in an ideal taste journey. The finest grapes from the pergola- and guyot-trained vineyards, with 4000 vines per hectare, are carefully harvested. These grapes are then dried in the lofts until February or March. The varieties used are corvina (40%), corvinone (40%) and rondinella (20%), renowned for their uniqueness. The location of the vineyards in the hilly area of Carlo Boscaini's estate contributes to their distinctive quality. Fermentation is conducted for about 10 days at a controlled temperature, with three daily pump-overs, in order to extract as much as possible from the skins. Racking when the grade is reached is done quickly, to preserve the sweetness of the wine. It is matured 6 months in the bottle, thus guaranteeing that a perfectly rested wine can be tasted when it is opened.
