Valpolicella Ripasso derives its name from the production technique used. The Ripasso method is an ancient practice that involves re-passing, or putting the Valpolicella wine in contact with the marc of Amarone or Recioto, for approximately 15-20 days. During this period, a second alcoholic fermentation takes place. The 2020 harvest in Valpolicella saw a decline in production and an increase in costs, but generally good grape quality, particularly in the hilly areas. The quantity of grapes harvested was lower than in previous years. This reduction is due to the implementation of consortium reductions and stricter quality selections, with a focus on wines that require long ageing. Despite a reduction in yield, the quality of the grapes was excellent, thanks to favourable weather conditions during the growing season. The grapes were found to be in good health and showed great potential for vinification. The vintage benefited from a mild winter and a spring with sufficient rainfall, which contributed to a good bud break. The average temperatures were conducive to the healthy development of the vines. In particular, the Valpolicella area benefited from favourable weather conditions, which helped to avoid extreme events such as hailstorms that could have negatively impacted the quality of the harvest. In conclusion, the 2020 harvest in Valpolicella presented challenges in terms of quantity, but maintained high quality standards, with a focus on the production of high-quality wines. The Valpolicella Ripasso Zane 2020 underwent fermentation for 20 days, with three daily pump-overs and two delestages. In February/March, the Amarone and Recioto marc was completed refermented and drawn off, then racked into barrels for 18-24 months. Subsequent ageing in the bottle for 6 months is necessary to rebalance the wine after the stress of bottling. The Valpolicella Ripasso Zane 2020 is distinguished by its softness and roundness. The tannins are effectively integrated, providing a balanced structure and good persistence. The aftertaste is complex, with a pleasant fruity note that encourages further consumption. This wine is ideally paired with typical Veneto dishes such as risottos, red meats, roasts and mature cheeses. Its versatility also makes it suitable for accompanying pasta dishes with rich sauces.
