Valpolicella Ripasso DOC Classico Superiore Ripasso Zane 2021 by Boscaini Carlo is produced on the hillsides of Sant'Ambrogio di Valpolicella, in the renowned classic area. Made from a traditional blend of Corvina (50%), Corvinone (40%), and Rondinella (10%) grapes, it follows the historic Ripasso method, undergoing a second fermentation with the skins (pomace) of Amarone and Recioto wines, giving it unique complexity and structure. It shows an intense ruby red colour with elegant aromas of spirit-soaked red berries and delicate spicy notes on the nose. On the palate, it is soft, full-bodied, and well balanced, with silky tannins and a long finish, making it perfect to accompany roasts, red meats, boiled dishes, and mature cheeses. The 2021 vintage brought excellent quality grapes due to optimal climate. Fermentation lasts about 20 days with pumping over and delestage, followed by a second fermentation on the skins between February and March. The wine then matures in large oak barrels (1500 to 5000 litres) for 18-24 months, plus an additional 6 months bottle ageing. Alcohol content is about 14% by volume. Boscaini Carlo's vineyards use the Guyot system, with 4000 plants per hectare and a yield of around 120 quintals per hectare, blending tradition and careful quality control at each stage.
