TASTING NOTES
The vintage 2019 was characterised by a very cold spring, which resulted in a significant vegetative delay at the beginning of the phenolic season. This was, however, largely recovered thanks to the splendid summer. Shortly before the harvest, rains arrived which lowered the night temperatures, and this allowed the grapes to ripen with a balanced gradation of sugars, acidity and aromas. It was a slightly delayed harvest compared to the last few years, and very slow, especially for the grapes destined for Amarone, but the grapes were sweet and healthy, and production dropped by around 15%. This wine is produced from grapes grown in the upper part of the estate called La Preosa. Fermentation of this Valpolicella Classico Superiore lasts about 20 days with three daily pump-overs, applying the French technique of delestage twice. Wine matured for one year in large 1500 litre oak barrels. Intense red colour with iridescent tones that evolve with time. The nose reveals hints of spice and sweeter notes such as vanilla through to ripe exotic fruit, such as notes of mango and papaya. On the palate there is a good structure and great balance. It goes best with red meat and game. It should be served at room temperature, preferably placed in a carafe and decanted half an hour beforehand.
