TASTING NOTES
In 2020, the beginning of the growing cycle was slightly earlier than in the previous year; no particular problems were encountered during flowering and fruit set. Temperature and rainfall trends in the months between March and June followed a decidedly vine-friendly pattern. Between the months of June and July temperatures were in line with seasonal averages, with some increase between the end of July and the first fortnight of August. The violent hailstorm that hit the Veronese region on August 23 brought extensive damage to the affected vineyards, but the areas were absolutely circumscribed. Given the good weather throughout the vegetative cycle, there were no phytosanitary problems. The grapes that arrived at the winery were healthy and sugary. This wine is made from grapes grown in the upper part of the estate called La Preosa. Fermentation of this Valpolicella Classico Superiore lasted about 20 days with three daily pumpings over, applying the French technique of delestage twice. The wine is aged for one year in large 1500-liter oak barrels. Deep red color with iridescent tones that evolve with time. Hints of spice and sweeter notes such as vanilla emerge on the nose to ripe exotic fruits such as mango and papaya notes. The palate shows good structure and great balance. It pairs best with red meats and game. It should be served at room temperature, preferably in a carafe and decanted half an hour before.
