Coeur de Nature is the first 100% organic cuvée of Champagne Devaux, it is the culmination of an environmental approach that has committed the Maison for several decades in the vineyards in the heart of Côte des Bar. Exclusively based on Pinot Noir, from vineyards planted for 15 years makes and certified according to the rules of organic and sustainable viticulture in Champagne. Alcoholic fermentation takes place in stainless steel tanks and is followed immediately after by the malolactic fermentation. Then follows the bottling and the second fermentation which lasts from 6 to 8 weeks. It still takes 2 years of aging on the lees before reaching the moment of disgorgement. A further refinement in the cellar of at least 3 months after the dosage is needed. In the glass it has a bright and intense gold color. The nose is fresh with very pleasant notes of biscuit on the finish. It shows immediately a good maturity, with aromas of bergamot, dehydrated apricot and dried flowers. On the palate it is fresh and savory. The intense aroma is evident but at the same time shows the elegance of the dehydrated fruit. Perfect with sweetbreads, stuffed goose, foie gras, turbot in a salt crust and monkfish. It can also be the perfect companion for a Chocolate and Lemon Ganache and pieces of bitter chocolate. Main aromas: Dried apricot, Bergamot.
