TASTING NOTES
Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, favoring the prolonged contact of the skins with the must. Malolactic fermentation takes place immediately after alcoholic fermentation. Aging is 24 months in French oak barrels (50% new, 50% one year) and 6 months in bottle. This Bordeaux blend is characterized by its affinity with dark cherries and licorice, but also boasts lingonberries, citrus and spices. Full-bodied and very intense, supported by succulent tannins and very juicy on the finish. Blend of Cabernet Sauvignon, Merlot and Petit Verdot is a wine of great texture, long-lived and highly drinkable, keep it in the dark and at cellar temperature to appreciate its evolution in the years to come. Drinking from 2021.
ORIGIN OF THE NAME

Donna Olimpia 1898

Donna Olimpia 1898 Discover Tenuta Donna Olimpia 1898 in Tuscany and its fine wines in our online store Of ancient and noble origins, the Donna Olimpia 1898 estate was baptized in the same year in honor of Olimpia Alliata, Lady of Biserno and wife of Gherardo della Gherardesca on the occasion of the 25th anniversary of their wedding. Located in the heart of Bolgheri , in the province of Livorno, spread over 60 hectares, 45 of which are new vineyards planted following a study on clones and rootstocks. The vines planted are obviously those whose vocation has been widely demonstrated: Cabernet Sauvignon, Cabernet Franc, Merlot, Syrah and Petit Verdot; for white wines, on the other hand, Vermentino, Viognier and Petit Manseng. Gifts of a unique territory, Donna Olimpia 1898's wines are characterized by their minerality, harmonic structure and intrinsic elegance. The estate boasts a modern cellar of 5000 square meters, designed to maximize energy savings and minimize environmental impact. It is equipped with the best available production technology, but still the aging in wood takes place in French oak barriques, so traditional. The barrel room is certainly the most important and evocative environment of the entire wine estate.
