TASTING NOTES
Saudoni is a contrada in the municipality of Lapio, in the province of Avellino. Laura De Vito is absolutely fascinated by zoning and for her wines in the cellar she has chosen to follow the Cru route, hence this wine takes its dialect name Li Sauruni from the contrada in which the grapes are grown. The vineyard grows at 600 m above sea level and is the highest vineyard on the estate. Harvesting of the Fiano grapes from the Li Sauruni vineyard generally starts in the second week of October, completely by hand, and the bunches are immediately taken to the cellar and gently pressed. Fermentation in thermoregulated steel tanks is followed by a long maturation, again in steel, of 9 months. Once bottled, Li Sauruni remains in the bottle for at least 20 months before release. This wine is characterised by typical hints of pear, apricot, lime, and light smoky notes that are gracefully enhanced by the long ageing. Each wine from a single vineyard of Laura De Vito is unique and characteristic.
