TASTING NOTES
The The Moscato Bianco grapes used for this wine are coming from 4 hectares of vineyards at 500 meters above sea level, completely south exposed, from vineyards with an average age of 45 years. This brings a very low yield, a high concentration of aromas but at the same time a marked acidity that is often lacking in these wines. After the soft pressing, the musts are clarified thanks to the cold in steel tanks after that they are transferred to an autoclave for fermentation at a controlled temperature, very low, to emphasize the aromas of the Muscat. The bottled wine has a high sugar residue (130g / l), a low alcohol content and fine bubbles. The high acidity makes it very fresh and not cloying, enhancing the floral aromas, the notes of orange blossom but at the same time marked hints of officinal herbs among which above all sage emerges. It is an elegant, aromatic and fresh wine that goes perfectly with Panettone, that is a typical italian Xmass cake, fruit tarts and all dried fruit. However, it is perfect for a plate of ham and figs or melon or with fresh salami. Incredible is the combination with hot and spicy dishes, typical of Indian and Thai cuisine.
