TASTING NOTES
This extraordinary Alta Langa sparkling wine is produced from a single vineyard, at 480 m above sea level, from 100% Pinot grapes. This is located just below the winery, facing east, and is very small, only 1 hectare. These Pinot Noir vineyards have an average age of 15 years and are characterised by very low yields: less than 35 quintals of healthy, perfectly ripe grapes producing 25 hl of wine. The manually selected grapes are macerated for 6 hours and then gently pressed in a pneumatic press. The base wine is fermented in steel tanks at 14°C and then bottled and stacked for the second fermentation. A month of re-fermentation at a very low controlled temperature, 30 to 40 months of ageing on the lees and about 1 year of remuage lead each bottle to disgorgement where nothing but the same wine is added. Indeed, the beauty of non-dosed sparkling wines is precisely this. The soft pink with salmon reflections is enlivened by a fine and persistent perlage. The sweetness of red apple is muted by pink grapefruit and rounded by bread crust. Mineral and well balanced, it reveals an important structure and a long persistence in the mouth.
