TASTING NOTES
The harvest began in the first days of October, with the first two days of cold maceration in steel tank and subsequent to fermentation at a controlled temperature were followed by 12 days of maceration on the skins. The malolactic fermentation is carried out both in steel tanks and in wooden vats, to endere the softer and more persuasive product. 24 months of aging in barriques and 10 in bottle are enough to give us a spectacular Brunello. The color is ruby red with a slight tendency to garnet. The nose is intense and complex, spicy, with dominant notes of morello cherry. The olfactory phase continues on the palate. The taste is full, harmonious, and persistent, with dense and silky tannins. The Wine Spectator ranking for the new vintages of San Filippo, on the market from January 2021, for both the 2015 and 2016 Riserva, another year considered extraordinary even before being put on the market, is already highly anticipated.
