TASTING NOTES
The 2018 vintage opened with a long winter rich in rainfall that restored the water supply of the soil that had weakened due to the climatic trend of the previous year. The winter season lasted until the beginning of March with temperatures below the average of recent years, leading to a slow and gradual vegetative restart of the vine, which was completed at the end of the same month. The germination was uniform without the problems of late frosts. Flowering and subsequent fruit set took place regularly and in optimal climatic conditions, suggesting right from the start that the vintage would be abundant. Dolcetto was the first black grape variety to be harvested and has an average sugar content, while acidity levels are lower than in recent years, even if the pH in musts remains at usual levels. This is mainly due to the relationship between the two main acid components: in fact the malic acid has degraded, thanks to the high daytime temperatures of late August-early September, while the tartaric acid formed at the beginning of the season when the temperatures are more low favored its synthesis, it was preserved in the berries in good concentration. The Savincato 2018 has a deep ruby red color with evident violet reflections. The nose is intense and fruity and there are notes of small fruits such as cherry, blueberry and blackberry. The taste is full, harmonious and persistent.
ORIGIN OF THE NAME
The name originates from the Savincati, a Celtic population present in Piedmont around the 1st century b.C.
