TASTING NOTES
The Carlo Boscaini winery is located in the hamlet of S. Ambrogio di Valpolicella, also known as the classic area, so the oldest production area of Amarone. After a scrupulous selection, the best bunches are left to dry in the loft for a minimum of 90 days, followed by an alcoholic fermentation characterized by prolonged contact with the skins and controlled temperature. The subsequent period of evolution in wood is carried out in barrels of varying sizes between 1300 and 5000 liters. Characterized by a deep garnet color with ruby ​​reflections, the nose reveals morello cherry, raspberry and blueberries, roses and violets, then again cigar tobacco and spicy spices. Wine of rank, which discloses race and remarkable structure in the glass, fresh fruit on the nose, which over time turns towards jam aromas, spicy tones, with hints of tobacco and final woody. Its extractive richness allows long periods of conservation that elevate complexity and sensations. It goes well with structured dishes, such as roast meats, game, aged cheeses, braised meats. It should be served at room temperature, preferably placed in a carafe and decanted a few hours before.
