TASTING NOTES
The Domaine de Verchères has known several generations of the Dupuis family. It covers some 27 hectares of vineyards spread over the communes of Mancey and Royer. The surface area of the property planted with chardonnay is about 13 hectares. The youngest vines are 15 years old, the oldest 37. The soil is clay-limestone, white in Royer and red in Mancey. The exposure is south-east, at an altitude of about 300 metres above sea level. The 2021 grape harvest started in the classic way, with a spring that was absolutely regular. In June, on the other hand, heavy rainfall caused the plants to develop a great deal, foreshadowing an imbalance in ripening. July and August, on the other hand, were warm and windy months, which dried out the soil and ripened the grapes well, which were harvested on the classic dates. The grapes were then carefully brought to the press. The pressing is very gentle, in order to avoid excessively dense juices. The juices obtained at the end of pressing are discarded. Fermentation takes place at a controlled temperature (below 20°) to preserve all the aromas. A part is fermented in large 300-litre oak barrels for 6-8 months. Bottling takes place the spring following the harvest. The wine is pale gold in colour, with greenish reflections. The nose reveals intense aromas, very characteristic of the variety: white flowers, white-fleshed fruit (pears). Bougogne Chardonnay Blanc accompanies cold or hot charcuterie dishes, as well as fish cooked in butter. When young, it goes well with shellfish and molluscs. To the eye, the wine shows a straw-yellow colour with faint green reflections. The nose reveals intense aromas, very characteristic of the variety: white flowers and white-fleshed fruit. On the palate it is elegant, direct, fresh-bodied and streamlined.
