This extraordinary sparkling wine from Alta Langa, near Alba in the Piedmont region, produced from 100% Pinot Noir grapes, vintage 2018, is the first single vineyard Classic Method of the house of Roberto Garbarino, and is characterized by harmony, elegance and complexity, emphasized by the missing dosage. Just below the cellar, from a single vineyard facing east, there is 1 hectare of Pinot Noir, with very low yields, less than 35 quintals of very healthy and perfectly ripe grapes that produce 25 hl of wine. Furthermore, this exposure is perfect for making the grapes benefit from the morning sun, thus avoiding burns, and temperature excursions that increase the production of aromas in the fruit. The manually selected bunches are left to macerate for 6 hours and then pressed. The base wine is fermented in steel tanks at 14 °C and subsequently bottled and stacked for the second fermentation. A month of refermentation at a controlled temperature, between 30 and 40 months of aging on the lees and about 1 year of remuage bring each bottle to disgorgement where nothing but the wine itself is added. In fact, the beauty of non-dosed sparkling wines is just that. The pale salmon pink is enlivened by a fine and persistent perlage. The sweetness of the red apple is sweetened by the pink grapefruit and rounded off by the crust of bread and sugared almonds. Mineral and well balanced, in the mouth it reveals an important structure and a long persistence.
