TASTING NOTES
Recioto, a sweet red wine, is produced thanks to a prolonged drying of the grapes, much greater than the drying of the Amarone grapes. The initial great sugar richness in the must is not completely transformed into alcohol, giving rise to a wine of great charm and richness, sweet and sinuous. The fermentation is carried out at a low temperature for 10 days with three daily pumping over, while the racking is carried out quickly to keep the sweetness of the wine intact, which is subsequently aged in the bottle for at least 6 months. A unique wine, a real symphony of aromas: dried rose, blueberries and sour cherries in alcohol. It is a wine to be tasted at the end of a meal, both with dry and pasty desserts, and with fresh creams and cheeses particularly rich in fat, accompanied by honey and jams.
