Gevrey-Chambertin is one of the most renowned villages in the Côte de Nuits. The vineyard is located on a hill, the altitude varies between 240 and 280 meters above the see water level. In the Gevrey-Chambertin appellation, only red wines are produced, from Pinot Noir grapes. The surface of the property is 2 hectares for a production of 65 hl (8700 bottles). The vineyard is conducted according to methods that respect the soil and the plant. The pruning is simple Guyot. The vinification after the harvest, with 80% of de-stemmed grapes, is carried out in different phases: first a long cold maceration for 3-5 days before fermentation. A fermentation for 4-5 days and then 3-4 days to finalize the extraction of soluble materials (tannins, anthocyanins) and allow for a good combination. After pressing, the resulting wine is immediately placed in oak barrels of 228 liters (none new in order to preserve the fruit and expression of the Pinot Noir). During the 18-month aging in wood, two rackings are carried out. Finally, the bottling is carried out with care in the cellar. What is obtained is a wine with an intense red color with a bouquet of great complexity; during its youth the fruity aromas dominate, while with the passing of the years, being a very tannic wine, the smoky aromas take over. The tannins are rounded to give a greater softness to the wine, which nevertheless maintains a great persistence.
