TASTING NOTES
A beautiful pure Cabernet Sauvignon with aromas and flavors of black currant and blackberry. Medium to full body, soft tannins and a juicy finish. A little hollow in the center of the palate, but still attractive and well done. And it will fill with age in the bottle. To drink after 2021. The harvest takes place at full ripeness at the end of September to maximize the fruity potential of the grapes. The grapes, selected in the vineyard, are then taken to the cellar to be vinified. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, with the cap emerging with daily pumping over, and then continuing with the cap submerged in order to facilitate the extraction of color and aromas, prolonging the maceration for about ten days. Malolactic fermentation takes place immediately after alcoholic fermentation. Aging is 18 months in French oak barrels (50% new, 50% one year) and 6 months in bottle.
ORIGIN OF THE NAME
The name Campo alla Giostra "dei cavalli" is in honor of the 20th general of Varenne, born in 1995, who was raised by Dubois in the stables of the Estate.
