TASTING NOTES
Deep and powerful on the nose it offers notes of black plums, blackberries, sandalwood and cumin. Many cherries in alcohol dominate the secondary scene. Medium body, slightly herbaceous tannins and a finish of good persistence. Better from 2022. The harvest takes place at full ripeness in the months of September and October. The grapes, selected in the vineyard, are then taken to the cellar to be vinified. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, favoring the prolonged contact of the skins with the must. Malolactic fermentation takes place immediately after alcoholic fermentation. Aging is 12-14 months in French oak barrels (50% new, 50% one year old) and 6 months in the bottle. ORIGIN OF THE NAME The name of Donna Olimpia 1898 is in honor of Olimpia Alliata Signora di Biserno and wife of Gherardo della Gherardesca, who baptized the estate in 1898 on the occasion of the 25th anniversary of their wedding.
