TASTING NOTES
Bolgheri Bianco 2020 is obtained from the grapes of the Donna Olimpia 1898 vineyards located in Bolgheri (LI), located on the coastal strip of the Tyrrhenian Sea, lying on a sandy, silty soil formed in a continental, aeolian, colluvial environment. During the winter, the climate was mild and rainy, with temperatures rarely close to 0 ° C. A nationwide lockdown was imposed in March but the buds took their time and blossomed in the last week of the month, thus giving time to prepare and organize to operate safely. From April to the end of May the weather was perfect, with hot and mostly dry days, while June was rather rainy, with the development of the vines accelerating. Hot and dry July, a fundamental condition for the triggering of the veraison which developed promptly and slowly towards the end of the month. In August, temperatures increased further, for a total of 47 days above 30 ° C throughout the season, with frequent peaks of 36 ° / 37 ° C which made this summer in fact comparable to that of 2015. Fortunately, the high temperatures Daytime temperatures at night dropped below 20 ° C, allowing the grapes to develop their aromatic potential and maintain good acidity. In the last days of August, the rains arrived in time to relieve excess water stress and lower temperatures. The grapes, selected in the vineyard, are then taken to the cellar to be immediately vinified. After pressing and decanting, the alcoholic fermentation takes place in stainless steel tanks at a controlled temperature, once this is completed a first racking is carried out, after which the wine rests on the fine lees (yeasts) for 14 months undergoing repeated pumping over (battonages) to suspend the yeasts deposited on the bottom. At the end of this long aging, the wine is cold stabilized and bottled. This technique makes the product more pleasant to the taste and very long-lived. Brilliant and lively straw yellow color of medium intensity. Aromas of ground ginger, fresh stone fruit and flowers. Medium-bodied with wet stone character. Crushed garden herbs. Green apple. ORIGIN OF THE NAME The name of Donna Olimpia 1898 is in honor of Olimpia Alliata Signora di Biserno and wife of Gherardo della Gherardesca, who baptized the estate in 1898 on the occasion of the 25th anniversary of their wedding.
