TASTING NOTES
A nice, pure cabernet sauvignon with berry and sweet tobacco aromas, as intense as a cigar box and spice. Hints of licorice. Full-bodied, with chewy tannins and plenty of structure. Perfect to open in 2023, we expect it to have fantastic longevity due to its tannins. Winter 2018 was harsh with several days of sub-zero temperatures, something that hadn't happened for several years. everything was characterized by frequent rains, which lasted even in spring, which restored the natural reserves of the area, partly in February and by the drought of 2017. The budding therefore took place late, but the weather conditions were very good from April to then they preferred growth, also bringing a slightly early flowering. The classic summer heat that never fails in Bolgheri manifested itself throughout the month of July and in the first half of August, until some rain lowered the temperature, cooling the plants. The good weather that lasted until September ensured a balanced conclusion of the harvest. The grapes of this Campo alla Giostra 2018 were harvested at full ripeness at the end of September to maximize the fruity potential of the grapes. The grapes, selected in the vineyard, were then taken to the cellar to be vinified. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature, with the cap emerging with daily pumping over, then continues with the cap submerged in order to favor the extraction of color and aromas, prolonging the maceration for about ten days. Malolactic fermentation occurs immediately after alcoholic fermentation. Aging is 18 months in French oak barrels (50% new, 50% one year) and 6 months in bottle.
ORIGIN OF THE NAME
The name Campo alla Giostra "dei cavalli" is in honor of the 20th general of Varenne, born in 1995, who was raised by Dubois in the stables of the Estate.
