TASTING NOTES
On the visual examination the Cognac has a nice copper color. On the nose are revealed aromas of dried fruit and honey. In the mouth it is sweet, opulent and pleasantly round. The taste ending is dominated by notes of sweet spices and crème brûlée. The delicious fruity aromas are given by a skilful craftsmanship that gives great persistence. Intoxicating and intense. To be tasted smoothly or with ice, to attenuate its intensity. To be served as an aperitif or at the end of a meal. Delicious if accompanied by a selection of structured cheeses (Bleu d'Auvergne, Roquefort, Cheddar) as well as lightly smoked cold cuts. Extraordinary combination with Pata Negra ham. Pierre de Segonzac uses two traditional pot stills in copper of 18 and 25 hectoliters, the ideal size to obtain the finest eau-de-vie. The procedure of heating use is called “soft” with distillation on fine lees. To obtain a unique a unique taste after distillation cut are made manually by nose.
