TASTING NOTES
The Cognac Réserve Rare is characterized by the intense copper color. On the nose there are notes of honey, dried fruit including, in particular, almond. The taste is silky and the texture is soft. The sweet notes of honey can be distinguished next to the depth of the black tea leaves. On the finish the mouth is enveloped by persistent and intense aromas of dried fruit. A very nice introduction to the complexity of an XO. Try the combination with a dessert such as toasted almond macaron, marron glacé ice cream or salted caramel. Pierre de Segonzac uses two traditional pot stills in copper of 18 and 25 hectoliters, the ideal size to obtain the finest eau-de-vie. The procedure of heating use is called “soft” with distillation on fine lees. To obtain a unique a unique taste after distillation cut are made manually by nose.
